I have been making my own chicken salad for lunch lately and itβs been so good. I eat it with tortilla chips because meals should be enjoyable. I use Greek yogurt and cottage cheese instead of mayo to make it higher protein and more filling and then I season it like crazy and it tastes so good.
this is what you could put in it: kale, scallions, roasted fennel, fennel tops, roasted sweet potato, roasted chickpeas, roasted brussels sprouts, honeycrisp apple, goat cheese, fried halloumi, & sunflower seeds!
