we have him to thank for Neal's Yard Dairy, Borough Market (and farmer's markets in the UK in general), Monmouth Coffee, and popularising Greek yoghurt (apparently before the 70s/80s we couldn't buy it in supermarkets). thank you Nicholas Saunders and god bless, glad i'm not living off mashed potato and boiled veg like my Scottish & Irish forebears and can instead enjoy cappuccinos and comté.
also this article is just an interesting look at how 'hippy' culture spawned so many of the big capitalist health food fads we know & love today - the story of Nicholas Saunders is comparable to the story of Erewhon, for example.
