I am ~first-gen~ Italian (first-gen american from Iti rents is what?) so pls just. Put a ladle of pasta water (while your nudies are cookin) into your sauce (in a saucepan) like a few min before you're done cooking the pasta itself. Then add pasta to saucepan and cook another minute all together. This is my mamma's recc so shout out Chiara.

- sweat down chopped white onions
- roasted/charred and peeled red peppers (i sometimes also mix red and yellow peppers), then chopped and added to onions
- add double cream
- blend
- add grated pecorino (best type of pasta to use with this is trofie) so tasty & light, yet unique. dare i say, better than napoletana (tomato) sauce.
i also love rigatoni, gnocchi, farfalle, linguini. and ziti because my mom makes the best baked ziti
