get up an hour+ earlier than you need, drink 2 coffees, look out the window, you could even have two discrete breakfast courses. breakfast is the best meal to extend imo
I love having my breakfasts like grazing boards... an over-easy egg, sliced avocado, fruit assortment, sausage, toast with hollandaise sauce, a yogurt with granola.. don't forget a delicious warm beverage
