my favorite vegetable to snack on recently has been peppers. you can get bags of mini sweet peppers at the grocery store (they're like the size of jalapenos roughly) or you can just buy some bell peppers (i'd recommend yellow, orange, and red) and cut them up. good on their own or you can dip in ranch or smth if you're so inclined. see also: carrots, celery

Super convenient, hold their nutritional value, and taste way better than most canned veggies. Keep packs of mixed veggies in the freezer to use when I need a quick meal.
