Rail travel

Ok it’s way more expensive than it should be (even with a railcard) but it’s cool that we can just get on a train and go pretty much anywhere in the country. No focussing on the road, no finding somewhere to park. Trainpal is good for cheaper tickets. Might get the metro to the coast this weekend…

Taking the amtrak

seriously just say screw it and take the amtrak. you get gorgeous sights and lte connection ✨ I did end up traveling for 4 days though bc i took 2 trains so i wouldn’t do that, just one is enough fr there also was a famous burrito lady who sold burritos at the train stop it was so nice to eat something other than cup noodles 😫

taking the train

train rides are always a source of peace and clarity for me- the 2.5 hr trip from my hometown to the city is the perfect duration for me to spend with myself and my thoughts…thank you amtrak 🙏

baked tofu and peanut sauce

• freeze block of tofu • thaw block of tofu • chop tofu and marinate in dry rub for chicken (with olive oil for lubrication) for about 4 hours • bake tofu @ 350 for 40 minutes, flipping halfway • start making peanut sauce from linked page • boil water and make rice noodles • add some kimchi, tofu, noodles to bowl • drown with peanut sauce
