In the fall I will dice and cook down leftover apples with some cinnamon and sugar and leave them in the refrigerator to use in our oats for the week. When I have some extra time in the morning and those apples in the fridge, these are the oats I make: *this recipe works best with OLD FASHIONED OATS. Quick and steel cut will not behave the same way* Fry oats in unsalted butter and salt until slightly golden brown. Add liquid, and cinnamon apples. cover and simmer to cook. Fry an egg! Leave it runny and salt the egg. Taste the oats to see if they are as sweet as you’d like. Add maple syrup, honey or whatever you’d like to adjust sweetness as needed. Also the option here to add just a smidge of lemon juice. Put your oats in a bow and put the egg on top. Top with fun stuff like roasted and slated pepitas or walnut halves. ENJOY! I did not include quantities because I do not know them. I wing it every time. Frying the oats at the beginning is a game changer. It changes the texture of the oats and the way they absorb water, and it adds a layer of savory flavor that really steps up your oatmeal game. I recommend going for a dryer oatmeal so you can really see the texture difference. When it’s cooked, if you prefer a wetter oatmeal just add more liquid and keep cooking!

Ok, I did steal this idea from this from that influencer who may or may not be in a Mormon cult. Anyway, whisk an egg with some oat milk, fresh chives, and thyme. Grab a slice of bread with some heft to it. Soak bread in the egg mixture and pan fry on both sides. Top with a little arugula, lemon/olive oil dressing, a fried egg, and that’s breakfast! ✨

mixed greens lightly wilted & salted in a skillet. a handful of cherry tomatoes tossed in and staggered. three eggs cracked on top. baked until the whites were fully cooked but the yolks still soft. topped with a light layer of cheese and crushed red pepper. matcha was the rest of my homemade blueberry lavender syrup with canned coconut milk.

They are the only mammal to lay eggs AND they have a bill kind of like a duck. They are also one of the only living mammals to produce venom! I have loved these little freaks for a long time. Honorable mention to chickens, especially roosters. Nothing will brighten your day quite like some silly little chickens.
