I have a WHOLE ASS NOTEBOOK about quality sandwich recipes I have eaten and recipes I want to try out. As a former Subwayâ„ąïž sandwich artist, I have always had that dog in me. Here is my tried and true “The Stinger” - 2 figs, sliced - proscuitto - fermented garlic honey (super easy to make, makes you look like a real chef) - chevre - balsamic glaze - arugula - focaccia (or any bread, but I make a mean loaf so I like to use the homemade stuff) - caramelized onions (longest and most delicate part of the recipe, requires few tools but lots of attention) - fresh basil

I am historically not a huge sandwich girl but my job doesn’t have a microwave so it was only a matter of time. a bit of a secret: open up a baguette, throw some nice butter and some brie on there, toast in the oven. get some spicy salami and some basil going. toss the salami and basil on the melted brie and toasted baguette and add a little pepper. alternatively, this grilled cheese with grated chorizo and parsley on some fresh sourdough

I would make this nearly everyday when I was living + working on a farm in WA last summer (spoiled bc I had access to some of the best produce I’ve ever eaten) but: Veggie sandwich  tzatziki on one side hummus on the other (or sometimes bitchin sauce
 dealers choice) topped with avocado, lettuce, onions, heirloom tomatoes, cucumbers, cheese (again dealer’s choice I just had halloumi to use up that day), a little olive oil, and a very crucial element of any good sandwich: salt/pepper/season in LAYERS Second option: BLT
 you can’t go wrong with a BLT mmmm hot tip for BLT: only lightly toast the top/outer layer of the bread so it won’t scrap the roof of your mouth but full crisp the interior ofc ok bye xoxo

Specifically Estes Park. I grew up with our summer vacations being there. We would rent a cabin, do horse back riding in the mountains, roast s’mores and hike. Truly breathtaking, and the scent of that small part of the world is a Smokey musk that needs to be bottled.
