after like 10 mins of looking at it, it starts pissing me off that I can't see any colors and I put my phone down and get back to what I am actually supposed to be doing
It's annoying for taking photos, but besides that it's a really good way to make the phone a less enticing timewaster. I have done it on previous devices, but used my new phone as an opportunity to switch back to grey. We'll see how long it lasts this time, though.
Most effective change I've made to reduce my screentime. It removes all of the visual intrigue from your screen. Plus you can set it up so you can toggle it on and off by triple clicking your power button.
