-hastily made guac
-flour tortilla tacos with whatever's in the fridge. cheese, leftover rice, beans, chopped up lettuce, jalapeno and a variety of salsas/hot sauces
you can make it as easy or as complex as you want (they even sell frozen onions and peppers already cut up) You can mix up the protein (vegetarian options too) It always tastes good and is quick.
And my three favorite burritos back home were barbacoa, picadillo, and deshebrada. Barbacoa is probably the most widely available depending on where you live
