ok. using meal loosely here. technically you should eat this with a tortilla chip but i think its lovely as a salad too.
ingredients (all optional, but i recommend using them all):
1 can corn
1 can black beans
4 roma tomatoes, diced
1/2 red onion, diced
1 bell pepper, diced
Juice of 1 lime
Cilantro to taste
1/2 cup olive oil (or to taste, but use more than you think)
1 cup white wine vinegar (or to taste, but use more than olive oil)
Salt to taste
Mix in bowl thoroughly. Usually better the second day but it might not last if you're like me. I recommend eating it on a tortilla chip or quesadilla but if you're trying to avoid carbs its good on its own!!!!
