Works best with small + sweet tomatoes. U can buy tsuyu if you want to keep things real simple but it’s also so easy to make. (I always make mine with hondashi because I don’t keep kombu in my pantry). Blanch + ice bath the tomatoes so they are easy to peel. It’s really nice with ginger or shiso… maybe both? The sorta thing you can throw in your fridge and forget about, and you can use the leftover tsuyu for soba also.
Online tinned fish mecca. The people who run it are so kind and so fast. Also the packaging is adorable and most tins come with little notes to suggest how to use them. I haven't shopped around much so not sure if the price is high or low, but having some tins around the house for quick meals is worth it. Ordering like 20 this afternoon so I can go alley cat mode with toast and heirloom tomatoes this summer
the tomato man @ my local farmers market says that they keep for about a week out in the open air, and from personal experience they are waaaayyyy scrummier @ room temp. plus u now have a beautiful bountiful bowl 2 decorate ur space with
