cut up these vegetables to your prefered size: - cucumber - baby tomato - bell pepper (i like yellow for the color) - red onion
then add canned chickpeas top with feta cheese mix all together
then add your basic vinaigrette - olive oil and vinegar (2:1 ratio) - a teaspoon of dijon mustard
whisk and voila!
drizzle the vinaigrette, squeeze some lemon juice and voila! yummy salad and very easy to meal prep, esp if you just cut all the vegetables ahead of time. i would say to store the vinaigrette separately and add it when ur about to eat it bc if you store it in meal prep containers, all of the vinaigrette is gonna consolidate at the bottom.

My fave is orzo with peas, chickpeas, dill (lots of it), lemon and olive oil

i just made this for the first time and it’s the best thing i’ve made in a while. i could eat 3 bowls of it
ingredients: 1 can of chickpeas dill (must have it) olive oil bread or crackers mustard (turns out whole foods yellow mustard is DELICIOUS!!!) mayo (i used chosen vegan avo oil mayo) pickles (required, grow up) microgreens or any type of green crunch avocado optional: nutritional yeast
1. 1/2 a can of chickpeas, or more if ur really hungry roasted in the oven w a little bit of olive oil a bunch of fresh dill + salt pep 2. usually i bake them at 350 for 10 min, the. mix and wait another 10 min 3. once that’s done, make ur toast 4. put the roasted chickpeas in a bowl and get to mashing, then add a good squeeze of mustard and a small spoonful of mayo 5. mix and taste (it’ll be really good), i also put some nooch on top 6. my bread was really small so i made it all into a snack plate type o thing. i put some pieces of mini toast on a plate with a bunch of pickles, microgreens, and some avocado 7. tada, enjoy. idk about u but i’m a dipper rather than a spreader

These are the things I needed to make really good salads at home: - a really big salad bowl for optimum tossing (I got mine from IKEA) - salad tossers (or just use tongs, but make sure you get it all tossed for optimum salad) - really good extra virgin olive oil (I almost never buy pre made dressing as this is the basis for all the dressings I like)
This is what I put in: - leaves - crunch - flavoursome/textural difference - dressing - acid - weight
Some examples: - leaves: spinach, rocket, watercress - crunch: thinly sliced radishes and celery, roasted chickpeas, roasted tenderstem brocolli, charred corn, apple - flavoursome/textural variation: chunks of goats cheese, shavings of parmesan, avocado, olives, mint, basil - dressing: olive oil, garlic salt, black pepper, chilli flakes, wholegrain mustard, balsamic vinegar glaze, hummus - acid: a squeeze of lemon, orange zest - weight: puy lentils, couscous, pasta, croutons
If you get a good amount of textural and flavour variation you're in for a good time. Just try out different combinations til you find what works for you! I also like to chop the leaves a little bit to get a nice balanced forkful of bits and leaves

the idea that you can only fuck up and express and be beautiful and destructive and explorative and constructive in your youth is simply a myth. you are going to continue to fuck up and you are going to continue to blossom. there's no linear path and structure on that. even people in their 50's completely change their entire lives. nothing is fixed and there is no path to follow. your life isn't over until it's over.
this narrative that once you start to age you can no longer explore and express is an oppressive, capitalist, and intentional one. also, it's just not true. your responsibility doesn't have to be boring or restrictive. the reason why you become more responsible is because you actually care about yourself. irresponsibility isn't the same as freedom. irresponsibility can be "fun" but also destroys you. having more responsibilities to keep yourself safe and cared for isn't the antithesis to fun and life and expression.
your feelings make sense though. in college it's easier to meet people and try new things. but ease doesn't translate to quality or longevity or intrigue. but funny enough, there are 30 year olds now that probably feel the exact same way about you as you feel about the people slightly younger than you.
there is no such thing as free years in terms of spirit.
expression and exploration is available in all forms at all ages. there are always places to go, hikes to walk, friends to laugh with, mistakes to make, good food to eat, art to create, fights to have, things to fail at, lessons to be learned, and love to be felt.
you're only 23. you're about to enter a new chapter of your life where you will fuck up and you will have stories to tell, adventure to explore, feelings to express, and people to love. and that is something that will always be true.

this is a 6 episode show thats more like a mini series. its directed by and starring phoebe waller bridge (fleabag). it's short, sweet, hilarious, and on netflix. highly recommend for wackiness and intrigue.
