I love cocktails and also putting lemon or lime juice in seltzer, but squeezing fresh citrus is annoying / takes too long, or I wait and my lemons/limes get old and hard.
To solve this I have gotten into the habit of making a weekly/bi-weekly batch of “super juice” which is this weird concoction designed to reduce waste/cost and sub in for real citrus juice for bartenders. (google it, many nerdy cocktail youtube videos w instructions).
my preferred recipes are these ones (he calls his version “pseudo citrus” but it’s the same concept): https://www.corpserevived.com/post/maximizing-citrus-part-4-mastering-pseudo-citrus. I get nearly 2 cups of lemon or lime juice from two fruits. It sounds complicated but it’s easy when you get the hang of it and it saves substantial time squeezing fresh citrus (and cleaning your juicer, etc)
