currently obsessed with this quiche recipe... i meal prep it on sunday's and eat it every morning during work with my morning coffee!
i usually replace 2 of the eggs with egg whites... but a lot of the time i'm too lazy to grab the scale so i don't do it... oops

- Shakshuka is the classic but prob too labor intensive (but a frozen or jarred shakshuka base actually works well on my experience and greatly speeds up the process) - Strapatsada is a delicious Greek dish I call “pizza eggs.” I will thinly slice a clove of garlic, fry it in some olive oil, then add oregano, grated tomatoes, and cook down. At the end add beaten eggs and cook until they’re done and you have a soft creamy eggy tomatoes mess. Feta is the best topping but if you’re watching sat fat you could add some olives or a green like arugula for extra fiber. I like eating it with crusty bread. It’s not as fast as cereal but it’s pretty hands off and you could prep beforehand. it’s not the absolute fastest but sooo worth it!! - Chinese Tomato Eggs - delicious, a little sweeter, tangier, and chunkier than the greek version but can be made even faster with more customization to your palette. I prefer to have this one over rice. You’ll find a ton of. versions online and at this point i just follow an amalgamation of recipe videos in my head. I like cooking with lau in general so I linked his recipe at the top of this rec.
Closing thoughts: anything is breakfast if it’s the first meal you eat!! I go with my heart and vibe and will eat leftovers for breakfast or make something that is usually considered a dinner or lunch food like a BLT or a cheese plate with a ton of raw onions. Free your find from the prison that is the american industrial complex and make yourself a bbq sandwich first thing in the morning!!
*edit to add another tomato banger that isn’t egg but fits the vibe and is very suited to meal prep* Paneer bhurji!! One of my fav easy dishes and it has a texture similar to the greek eggs listed above but with cheese instead of egg and more fresh spices like cumin and aromatics. this is not one i’d whip up first thing in the morning but it’s a satisfying delicious protein-packed dish you can heat up in the morning and eat with some rice or naan or even just some toast, it’s delicious any way you serve it. Again, i sort of follow an amalgam of recipes but i like to crumble my paneer instead of grate it. try this paneer bhurji video from Hebbars kitchen as a starting point. this is also a great dish if you want to try making your own paneer since the firmness isn’t as important as you’ll crumble it up anyway. thanks for this ask bc i forgot about all these lovely dishes since last tomato season!!

i've recently been coming out of a huuuge depressive slump, and the best thing i did for myself was to start waking up a little bit earlier for work, make myself a yummy coffee, and sit by my big window and read + think for ~20 mins. it boosts my mood soooo much throughout the day and helps me to be so much more mindful
