The stew with rice and a dates chutney during winter just hits different. I topped the rice with some fried onions The stew is simple with cooked beef mince, tomato puree, onions, garlic and some frozen vegetables.
Nothing hits this time of year like a nice hot stew. Iโve been using a slightly altered family recipe and itโs simple to make but so good. Honestly, it looks like most recipes online are super similar. Whatโs even better though โ Iโve been serving the stew with some horseradish cream, found in the NYT cooking recipe. Next time I make this, I want to experiment with more root vegetables, maybe some parsnips or beets. Itโs an ever-evolving recipe.
Stews and soups and broths galore!
I could forever eat an amalgamation of vegetables, meats, carbs and lentils boiled in an umami rich broth. Just thinking about it makes me happy!
