I lived off cottage cheese last year. When I was too depressed to cook, I’d mix some smoked salmon and everything bagel seasoning in there (if you’re eating fish, canned fish works too) and just eat that with chips. Mix some baby spinach in there too, or use a bell pepper or carrots instead of chips to get some veggies. Not even a toaster is required. I’ve had the dairy ick recently, though, so red lentil pasta and oats w/eggs are my go tos.

Nobody should’ve let  me become a vegetarian. My diet is horrifically unbalanced, and while I don’t really miss the taste of meat, I do miss the easy protein of a big ass chicken breast. There are many non-meat ways to get protein, but they aren’t quite as quick, accessible, or protein-dense. This comes pretty close. Better than the regular stuff, more tart and dense. The greek yogurt of cottage cheese.

My toaster is having a bad week so she doesn’t have the energy to hold the lever down anymore. Which means I have to stand there pressing it down for three minutes making sure my toast doesn’t burn. I used to take that time for granted, now it’s being robbed of me by my broken toaster. Trying to give her grace.
