Obviously major shoutout to lentils but that’s been said. Creamy protein pasta is like my version of boxed mac and cheese during the week. Blend up silken or soft tofu with nutritional yeast and miso + pepper + salted pasta water and mix with chickpea pasta for extra protein. Wilt some spinach in there and youā€˜re set.

I got a lot of food allergies. But this one I can have. It’s creamy (with no dairy), and pesto-y (with no alliums if you don’t want to add ’em). My fav recipe got taken down so I added this one which is similar if not the same. I recommend adding 2 TBS of unfortified nutritional yeast and maybe some chicken as your protein. But holy frick is it SO good. (pictured: lost recipe from a site no longer up)

i do a few that i love but one of the easiest is lemon brocc pasta: rotini (or penne), head or two of broccoli, loooots of spinach, lots of minced garlic (store bought is ok!), few tbsp lemon juice to taste, pinch of salt and pepper, ample parmesan pasta obv takes a bit but there’s basically no prep. if you really wanna save more time/energy literally just get microwave broccoli/chopped spinach instead of fresh lol. and if you’re cooking for one, an entire box of pasta will make quite a few meals for your next lunches and dinners, and it microwaves well! so you get the home cooked meal vibe for a few days without too much work

This was the first movie I watched in Covid lockdown for obvious reasons, but its theme hits even harder now in the midst of the LA fires and resulting toxic air. Starring Julianne Moore, who I think is one of our last living movie stars. She plays this composed and delicate woman, and refers to herself as ā€œa bit of a milkaholicā€ lol. It’s setting in late 80’s San Fernando Valley is meaningful to me having grown up in 90’s SoCal suburbia and also believing that my way too comfortable surroundings were trying to kill me.
