pepper is easily one of my favorite seasonings, as lame as that sounds. but high quality pepper—yes you pay for what you get—truly blooms differently. one crack of that thwang and you can transform a generic bowl of buttered noodles into a dynamic, dancing, delicate dish that would be priced at a humble $24 in a LES wine bar.
