cup toasted coconut vanilla yogurt (or any cup yogurt mine was live & fit)
1 egg
1 stick butter
1 3/4c sugar
2.5c flour
tsp baking soda and baking powder bake 35-45 mins or until done

I made a coconut cake with pineapple filling and cream cheese frosting! I toasted coconut and added that around the outside. Very sweet but tasted good. There are a few adjustments I’d make next time.
tried this recipe today! Was super tasty, I’m a sucker for a cake recipe that needs sour cream ufhhhh!! Would recommend using WAYYY less milk in the icing if you want to have an icing similar to the picture and a good bit more lemon zest if you want a proper lemon flavor. all around good recipe that I messed up multiple times and it still turned out tasty!

375g of carrots (the fresher they are the better the outcome)
400g of sugar
150g of natural yogurt
120ml of oil (coconut oil or butter)
4 eggs
345g of flour (not self-raising)
1g of sodium bicarbonate(when it interacts with the yogurt it makes the cake moist)
8g of baking soda
To a blender add diced carrots, sugar, yogurt, oil (or butter) and the eggs, and mix it until it becomes a homogenous liquid.
Add flour, sodium bicarbonate and baking soda and mix it with a spoon (try to combine it after the baking soda is in you do not want to heavily whisk the batter).
Add the mixture to your tray (spread a thin layer of butter and flour in it so that the cake doesn't stick) and bake it at 180C until you can stick a toothpick in it and it comes out clean. For the icing, I like to combine condensed milk (1 can), 3 spoons of chocolate powder and 1/2 spoons of butter in a pan and mix it until baubles form. After that count for 3 minutes and when the mixture is thickened pour it over the cake.
