soo this is probably cheating because the steak makes it taste amazing, but I love making this as a protein-heavy salad dinner. or tastes delicious with leftover steak!

also +1 to good quality EVOO. I can eat probs any combo of veggies with olive oil and S&P as dressing! (and when Iβm feelin fancy, some heirloom tomatoes)
