Rec | JAPANESE STRAWBERRY CAKE

I’m a baker and mostly a cake maker so it’s hard to choose but I love this cake so much it’s so light and fluffy and refreshing and my fav is that it’s not too sweet. Other favs are roll cakes(especially ube and coconut), lord baltimores, basque cheesecake, and Victoria sponge.

Strawberry shortcake

All I wanted for my birthday this year was a strawberry shortcake. My friend planned to bake but ran out of time, so picked up instead (special shoutout Mia’s Brooklyn Bakery btw, was delicious). Sure I know it’s maaaybe a lil basic for a cake rec, BUT… yummmmm. I ate it for breakfast the next day and the one after that too.

Strawberry cake

This cake has been a smash hit every time I’ve made it, and it’s stupid easy. It uses both real strawberries and strawberry jello powder, so it tastes amazing while also having a nice pink color. I use any super-moist box cake mix, and premade cream cheese frosting. I’ve also subbed in sugar-free jello powder before and it still tastes great!

The Triple Berry Cream Cake

A dear friend catered my baby shower with the Triple Berry Cream Cake from Sweet Lady Jane, and there was no turning back.More light cream and sumptuous fresh berries than cake, it feels like love made edible, and makes the impossible seem possible. It has been my birthday cake of choice ever since and is always devoured instantly by my friends and family. Turns out, I am not the only one - many friends treasure this one-of-a-kind delight, so I get to have it more than once a year - and I always delight, transforming into a six year old as soon as it touches my lips.
