I love making this on a Sunday and eating off of it all week. It’s so good on its own but you could use it with other dishes as well. It’s great with a salad, it rules with a crusty piece of bread. Also a great way to use random things you have leftover or need to use it - throw in broccoli, nuts, other beans and cheeses, whatever your heart desires!

I'd say i f with cold chickpeas pretty heavily. You don't have to make a massive stew and boil em to death. Just throw them in a bowl with some sun dried tomatoes, some spinach, maybe some olive oil, lemon, bunch of herbs and enjoy. or maybe go crazy and add hummus for some chickpea on chickpea action

I have this for days on end and never get tired of it. So many ways to subvert the format with spices and garnishes. It is VEGAN (I am not vegan but respect) so it's something everyone can enjoy.
