This rice bowl was one of the first things I learned how to make when I first learned how to make more meals for myself and it so so hard to fuck up!! honestly so delish and easy. the recipe I linked also adds kimchi which Iβve never added to it before but cookings an adventure so do whatever!!

I'm not a stellar cook, but I slap that shit together so fast and it is so satisfying. I've been baking kale with sesame oil instead of cavolo nero because I was unwilling to google what it is or where to acquire it.

I loosely follow eric kimβs recipe below for the tuna, some marinated tofu would also work well. Then I make a big pot of rice, and add whatever toppings I have on hand throughout the week (kimchi, cucumber, cilantro, sesame seeds, all things that require very little of you and can be done ahead)
For the lentils, I make a big pot at the beginning of the week and again, top with various things I have around (an egg, a handful of arugula, lemon, yogurt, garlic)
I find that having two bases that are different enough and customizable keeps feeding yourself simply from feeling like a punishment while you focus on other things.
