I loosely follow eric kim’s recipe below for the tuna, some marinated tofu would also work well. Then I make a big pot of rice, and add whatever toppings I have on hand throughout the week (kimchi, cucumber, cilantro, sesame seeds, all things that require very little of you and can be done ahead) For the lentils, I make a big pot at the beginning of the week and again, top with various things I have around (an egg, a handful of arugula, lemon, yogurt, garlic) I find that having two bases that are different enough and customizable keeps feeding yourself simply from feeling like a punishment while you focus on other things. ps: if you’re new to lentils, lemme know, i’ll write out my recipe for ya!

Breakfast, lunch, dinner, every day. The occasional dinner or lunch out maybe 3-5 times per month. But, other than that, what I’m eating is the fruit of my own labor. Currently fasting so I’ve had to get creative without being able to use any dairy products, eggs and cheese especially. Some of my favorite lenten meals I’ve made this time around are: -Bibimbap with homemade daikon radish kimchi -Jumeokbap with beefless bulgogi (got the three pack from TJ’s for $5 and it was good but overpriced so I made my own big batch and they’re even better) -Poor man’s hotpot AKA ttbeoki with ramen,enoki mushroons, pumpkin, etc. -Vietnamese spring rolls with peanut sauce - Many delicious variations of chickpea salad - Lavash wraps with fried eggplant, hummus, baba ganoush, fried kabocha squash, etc. - A vegan thyme ailoi that was one of the best creamy sauces I’ve ever made and used for a BLT with blistered cherry tomatoes and fake bacon. - Cantonese salt and pepper tofu (literally one of my favorite dishes, fasting or not. roasting and grinding whole sichuan peppercorns will make you eat like a king) - Chilaquiles with soyrizo and a delicious tofu egg scramble my husband made (black salt is a nonnegotiable for a tofu scramble imo!)

make a bunch of rice at the beginning of the week, stick it in the fridge, and then have it for breakfast with your protein of choice, avocado, cucumber, etc. I used to do this with eggs and it’s delicious and filling! You can also use it to make rice pudding for breakfast though I suspect texturally, you might not love that either.

This rice bowl was one of the first things I learned how to make when I first learned how to make more meals for myself and it so so hard to fuck up!! honestly so delish and easy. the recipe I linked also adds kimchi which I’ve never added to it before but cookings an adventure so do whatever!!

And then when you’ve made a few random connections this way (and there’s not some blaring reason why they’d hate each other) invite them all for a park hang or lil dinner, even if it seems sorta early in the friendships! Being the person that brings other people together can make you feel and come off more well connected than you might feel, and before ya know it, you’ve started a friend group! You’re gonna do great, honey! People like ya!
