Had a craving and combined a few different recipes to keep things simple. Slapped it into my notes section but figured y’all could use it too. The world deserves fresh biscuits with ease.
240 g flour
70 g cold, diced butter
1 Tbsp baking powder
1 Tbsp sugar
1 Tsp salt
1 cup milk
1/2 tbsp lemon juice
2 Jalapeños, seeds removed and diced
100 g sharp cheddar, grated
Preheat oven to 425 degrees Fahrenheit. Sift flour, and baking powder into a large bowl. Add sugar and salt and whisk together. Cut in butter with clean hands until the mixture resembles a coarse oatmeal. Add the diced jalapeños and nearly all of the grated cheddar, leaving a handful to top the biscuits with later. In a separate container combine the lemon juice and milk. Pour the liquid in with the flour-butter mixture and mix until just combined. Drop clumps of dough onto a lined baking sheet leaving at least 2” spaces between them. Sprinkle the rest of the cheddar on top. Bake for 12-15 minutes, turning the tray at the halfway point. Use a toothpick to test doneness. Should yield 8-10 biscuits.
