Itās undoubtedly zucchini muffin summer. Call it the zucchini aesthetic, call it what you want, I will be curating my entire summer to encapsulate the essence of zucchini.
This isnāt arbitrary. Iām on a mission of recipe testing to achieve what one might call the ultimate zucchini muffin (based on a nostalgic memory of a jumbo muffin from Wild Oats groceryāwhich has since closed down). This is an ongoing adventure so please stand by for the final result.

iām trying to unlearn a lot of forms of convenience and being thankful for what the earth allows, so iām starting to only buy in season produce this year. hereās what in season for summer if youād like to join me:
fruits: berries, watermelons and stone fruits
veg: carrots, corn, asparagus, beets, peas, cucumber, eggplant, herbs, tomato, zucchini and squash
thereās lots of variety in the things you can make in the summer and this is the time these fruits and veggies will be at their best. a tip: try buying your herbs now and freezing or drying them for easy use later in the year :)

Iāve started getting a box of produce that is usually deemed too āuglyā to be sold at supermarkets. Even the solo box has a lot!! Nothing like not wanting to waste your produce to inspire you to cook!
Things Iāve made:
* Salted egg chicken & broccoli
* Japanese chicken curry with potatoes & carrots
* Dehydrated apples (Hurrah instant pot)a
* Fried rice with green beans, carrots, and egg
* Fried noodles with tofu, veg, and a tin of spiced mackerel pate that I got at a fancy grocer
* Various varieties of avocado on toast/crackers (with feta or eggs or or fancy grocer pastrami)
* Ultra buttery roast veg with cheesy polenta
* Air fried Brussel sprouts
* Sri Lankan pumpkin curry
