Heās such a silly dude. All his cookbooks are more of a guiding light than they are rigid rules. He teaches you how to make some great plates, but by no means does it feel like heās forcing you to do it exactly his way. Iāve always enjoyed his cooking videos for that reason; itās never āBoil this for 20 minutesā itās āBoil this until it feels good.ā Theyāre def more American classic style cooking but I think thereās a plethora of wisdom in his recipes.
