I could forever eat an amalgamation of vegetables, meats, carbs and lentils boiled in an umami rich broth. Just thinking about it makes me happy!
Anything by Carter Were She has a few cookbooks, as well as a stubstack, and I regularly make her versions of:

So easy so cozy so yummy so filling so ahhhhhh 🥰 I’ve always made caldo verde for weeknight dinners, but a month ago I started craving chicken noodle soup and Chef John’s recipe is my go-to with making your own roasted chicken broth. A vegan variation of caldo verde is a game changer too tbh, so much cheaper and a batch can feed an army when you add some beans and rice
Instant umami (in many Asian cuisines it’s common to not brown the meat as much for umami flavour as they get umami from fish sauce, soy sauce, oyster sauce etc. so if you use a bit of both it means u are getting double the richness 😈)
