the only thing I make where I'm like, yeah I can just straight up eat this whole block of tofu. take silken tofu (i usually do straight out of the fridge or shelf stable packaging), put some green onions, garlic, chili (flakes, crisp, whatever), soy sauce, sugar, and pour hot oil over top. kind of feels like a science experiment and takes 10 mins to make. ingredients don't have to be particular, sometimes I just do cold chili crisp or ginger scallion oil on the tofu. good over rice with stir fry veggies or by itself I linked a recipe from Sarah's Vegan Kitchen, she has a lot of cheap, easy, filling, vegan recipes

I got this recipe from a random German lady in a gaming community and its never let me down:
Mix the following in a small bowl: -1 finely cut scallion -2 tbsp soy sauce -1 tbsp mirin -1 tbsp sugar -0.5 tsp minced garlic -0.5 tsp minced ginger -1 tsp sesame seeds (toasted or untoasted) -1tsp Korean chili flakes
as for me, I also add like a teaspoon of Korean chili paste I also have a ginger/garlic paste from the Asia store which I like to use if I don't have fresh ginger and it's just as good! This is for 200grams of Tofu The Tofu should be a firm sort, drain it a bit and then cut to slices Put in a pan with oil and fry 5 min, then turn around and fry again for 5 min, it should have a crunchy texture Add the stuff you mixed in the bowl and let it simmer for 3 min, that's it!
I usually put it on a bed of salad (mangold, rucola and fresh spinach go so well) which I mixed with only a bit of a light dressing on oil base (like this time I made one of olive oil, herbal vinegar, salt, pepper, honey and rough-grained mustard) But a simple herbal dressing from the bottle is fine too, I just think the sour/herbal taste goes really well with the tofu and you don't even need anything else with it! so if you prepare the sauce and salad as the tofu fries, you really only spend 15min in the kitchen for it

Always a good comfort meal! The tofu is crunchy on the outside and soft on the inside once I’ve pan fried it. I like to use tofu that’s been frozen to perfectly remove moisture + the flavor seeps through much better.
For the noodles, I use Trader Joe’s squiggly knife cut noodles but add to the sesame based sauce with peanut butter, etc.

I was vegan for a while and I would make this pretty often. it’s silken tofu mashed and cooked in a pan with whatever spices and veggies you want. You can serve it on toast or eat it however, I would usually throw it in a breakfast burrito. (and if you want easy I would just make it in bulk put it in my burritos with my other ingredients and freeze them. Then just pop them in the microwave) V delicious and good source of protein.

my friends with salsas get more compliments on their bikes than anyone else. the geometries are better for more casual (comfortable) riding. plus no weird part fitment/comparability issues if you ever want to swap stuff out
