Help, I think I’ve peaked with this one!
In defense of meatballs (not that they are under particular scrutiny at the moment): you throw everything into a bowl, shape them into balls, and then throw them into the oven until they are done. How customizable indeed!!
* Want chicken instead of beef? No problem! * How about some scallion, ginger, and sesame oil? Absolutely! * In need of the Maillard reaction? Opt for the stove instead of the oven!
Here I served them with a Thai red coconut curry sauce (perfection) and rice. Gorgeous! (recipe inspired by gillehouston on insta thank you)

Its the perfect weeknight meal. Quick and easy to make, but is so tasty and you get 3 or 4 portions for leftovers.
You just: - cook onion and garlic and maybe ginger - cook aromatics with paste - add coconut milk, lemon juice, fish sauce, and broth/water and bring to a simmer - add raw chicken for 8 min - add what chopped vegetables you want for 2 more min - serve over rice
Don't have lemon? Don't have ginger? Don't have fish sauce? Its fine! Those will make it better but it still tastes good. I would suggest buying the paste and coconut milk from a grocery store that sells asian ingredients, the stuff from the world food aisle of the grocery store is not as good but it still works

super super super good !!!
soup base: - thai red curry paste - onions - grated garlic + ginger - lime juice - honey - cardamom and coriander
then we added: - noodles - pak-choi - carrots - sesame seeds seaweed - PERFECTLY COOKED EGG🤩
10/10 delish !!!!!!

This recipe by Marion’s Kitchen has to be up in my top 5’s this year. It’s super quick, easy, and very forgiving (it’s really hard to mess this up). Fair warning, the combination of the garlic and Thai chili will uppercut your nostrils the minute it hits the pan, but it’s well worth the pain. This nostalgic dish’s aroma takes me back to the sidewalks of an Southeast Asian food stall, best paired with a cold glass of Singha 😉🍻

In pre-21st century movies and media, we always see couples that go to bed, independently read their books, and once sleepy, clap off the lights and peacefully retire to sleep. Maybe there’s a reason this trope is so common! Maybe couples who read together, sleep together!!
Reading before bed regulates my brain and body in ways I did not know were possible. Screens are bad for you, specifically and especially before bedtime… who knew! And with a good nights sleep I have so much energy to do things, including but not limited to more reading.

Collecting a stack of printed takeout menus from local restaurants is equivalent to finding community in your town/city. I love to get off my phone and flip through a printed menu when deciding what to order for dinner, appreciating the graphic design choices and the hometown staples on each menu.
And they are only wasteful if you waste them! What great material for emergency note-taking, for adorning your fridge, for COLLAGING! Oh my goodness what great and meaningful content organically exists in a printed takeout menu from your favorite local spot.

I fear one of the top reasons I get out of bed for my perhaps boring, often drab desk job is to wear outfits that are neither boring or drab! Do my coworkers entirely understand why I wear my layers? Not necessarily, but they’re learning!
