Just grate or cut your tomatoes, add some pepper and a drizzle of olive oil. Dip whatever in it or spread it out on some bread (then it would be pan con tomate I think) and put on some flaky sea salt. Its fresh, light and delicous. I also like bruschetta, but sometimes the garlic on the bread is a bit too pungent in the morning. It's easy to make and has been my obsession lately.

I made this for the first time today. It was SO GOOD. I am going to smell like garlic for the rest of my life. Used my ex's recipe. I had this every day on my last trip to Spain (my favourite one I had was in San Sebastian). Tastes better with Spanish tomatoes not UK ones but the pomodorino ones I used today were pretty good. I think his recipe of blending it is not typical but I love it. Isn't it beautiful the things we take from relationships. I'm not sure if he'd agree lol.

you could + basil + avocado + whatever you’ve got around if you’re fancy also bread to mop up the juices is useful also you salt the tomato first it draws out the juice and then you have ready made dressing

It’s not flashy really but I feel like Italian doesn’t have to be. Here’s the recipe I learned in Tuscany (featuring the big secret):
For the bruschetta: - find two beautiful, firm roma tomatoes and dice them into small squares - chop up some basil - combine in a bowl with salt and pepper and a few hearty glugs of extra virgin olive oil (adjust this to your personal taste)
For the bread: - find some nice French baguette and slice into rounds - place on baking sheet and broil until golden (normally should only take a couple minutes per side) - the SECRET: once your bread is toasty take it out and rub a peeled garlic clove over every slice; this shit is sooooo good - finish by lightly drizzling olive oil onto the slices and adding a pinch of salt

I always found it hard to keep in contact with people since I'm not the best texter. Plus, I usualy felt like a floater friend, like I just wasn't in the loop cause people liked others more. Of course, growing apart is nothing bad and if they were truly like that, than it's better that I'm no longer friends with them. However, I got in contact with someone I hadn't spoken with for a long time and it was great. Life gets busy and a lot of people are full in their head from everything. It's not always cause they never think of you (anymore) or don't value your friendship.

Trying hard is sometimes being looked down upon, it's not "cool". You know what, who cares. I get comments so often, like "your intense, you're such a try hard or why do you actually ...". I used to see it as weird/mean comments, until later when I realised some people just hate to see others actually enjoying themeselves. Another thing, the fact that I'm doing my best doesn't mean that I excell and tbh I used to find that a bit depressing. But recently I've learned to embrace the fact that it's actually quite nice to just do things, whatever the result. Def a change in mindset on things, but it has been a really nice change in mindset so far.
