i like to make a lot of vegeterian/vegan/plant based foods, and a nice thick soup/stew is probably the easiest thing you can make, and you can add anything you like i usually start off by lightly frying up some garlic and chopped white onion with a bit of oil and some chili powder in a large pot(my gf's little sister gifted me a large black pot with a picture of the Moomin family on it); after the onion has browned a bit i add a bit of water, just to cover it and let it soften while i prep my other vegetables; here comes the fun part, you can add whatever your heart desires!! when i'm going for simple, i'll usually add just potatoes and carrots, season well and cook till thickened, but when i'm feeling crazy, i'll add some tomato juice with the water and onions while i cut the veg(we're talking potatoes, carrots, zucchini, bell peppers, tomatoes, spring onion etc etc generally i get anything that looks nice or is sitting in the fridge for too long, peas are also great, but i usually use those frozen); after i've added all the vegetables, i add spices(salt, black pepper, bit of garlic powder, red smoked paprika but this is absolutely your choice, add less or add even more), i add in more water(just enough to cover everything in the pot) and i let it cook on medium; after it's cooked for a while, i like to add frozen spinach( stew's a really great way to just add a bunch of stuff you'd usually forget to eat or find difficult to add in a recipe) and sometimes i even and lentils, chickpeas or beans(depending on time + patience, if you have neither, just add whichever(or mix!) canned, saves you time and is really low effort); once everything's cooked through, it should be nice and thick( you can always add a bit of water in which you've dissolved a teaspoon or two of flour if you wish to thicken the stew). serve in a big bowl, with some bread of your choice(homemade torillas are amazing with this) and enjoy. it really basically just comes down to you adding whatever vegetable and spices you like, it's really simple and doesn't require any cooking skills. enjoy, share a picture if you end up making it :)

• i make a vegetarian (but not vegan) gnocchi with sundried tomatoes and spinach and a sauce made from tomato paste and cream. so easy and so tasty. • japanese curry is so easy too. carrots, onion, potato, capsicum, and mushrooms all in a pot cooking until soft, then you add vege stock and golden curry mix in and the whole dish makes itself. serve with rice! • stews and soups are always good too, especially when packed with lots of lentis. you just prep all the ingredients and chuck them in to cook themselves. • vegetarian nachos, just make a bean / lentil based chili! • not vegan but shakshouka is also great too because it's heavy on the protein. essentially just onion, capsicum, lots of diced tomatoes, which you then crack about 6 eggs into to cook. • i went a long time not eating imitation meat, but you can get some really delicious fake sausages and burger patties, both of which you can just cook up and chuck in a bun with a few more ingredients. • there are lots of delicious and varied ways to make tofu dishes. my friend made me a marinated tofu sandwich once and it blew my mind. good luck! confidence comes with practice. just stick to a simple list of dishes until you feel more comfortable, then you can look to branching out more. make things that you know you love to eat, or that you feel inspired to cook, so that you start to associate cooking with a reward or a treat. and have fun!

- roast any vegetables you think would go together (broccoli + carrot, butternut squash + fennel, throw some alliums in there …) - blend until smooth (reserve some part to add back in later if you like some chunks) - flavor: add salt and pepper and some spices to taste (toasted cumin, smoked paprika, rosemary are some of my favorites). Make sure you add enough (at least a few tbsp per pot). Could also add broth or buillion if you have it. - add cheese or a sip of cream or milk or other creamy substance - add cronch, like some croutons or toasted bread or crispy onions
Same basic formula mixed and matched with anything left in your house results in infinite options!

Vegan Caldo Verde * 1 large yellow onion diced * 1 lb carrots sliced * 6 cloves of garlic minced (but go with your heart as always for garlic) * Cayenne pepper * 2 tbsp Better Than Boullion veggie base (optional) * 2-3 russet potatoes sliced * 1-3 bunches of kale chopped depending on bunch size on how much of a kale fiend you are (lacinato is my preference) * 1-2 cans of cannellini beans
In a large dutch oven (mine is 5.5 quarts) or pot heat 2-3 tbsp olive oil over medium heat and saute the onion and carrots for a few minutes. I sprinkle in some kosher salt, black pepper, and cayenne pepper too. Throw in the garlic and saute for another minute. I like to turn up the heat to medium high to get the fond/caramelization at the bottom of the vessel, just be careful that it doesn't burn.
Pour in 2.5 quarts of cold tap water and scrape off the fond at the bottom of the pan with a wooden spoon. This may result in a satisfactory broth on its own for you, but you can add the veggie base if you want. Turn up the heat to high to get the broth to boil, then toss in the potatoes. Turn heat back down to medium to maintain boil.
When the potatoes are tender, go to town on them with a masher, then add the kale. When the kale is like 2/3 done I add the cannellini beans and keep cooking until the kale and beans are done.
I love this recipe bc it's easy to shop for, easy to make, filling (you can add leftover rice to make it even more filling), budget-friendly, and nutritious. You can freeze it too.
I'd love to show you how it's done and we can enjoy soup together lmao
White rice + broccoli + protein Most of the time I'll use canned sardines or ground turkey or pork chops or chicken breast/thigh, but I've used tofu before.

sitting in the park, on a bench that's half light, half shade; later, walking very slowly through the park, just looking around; honorable mentions from today: a little kid whose face was completely covered in chocolate icecream, a man in a nice linen shirt, two dogs that looked exactly the same(although one was smaller, the other one larger, they looked like a big and a mini version of eachother), a tree with leaves that reminded us of stars(Liquidambar styraciflua or sweetgum tree) and a crow that was trying to bury a grey BIC lighter it found
