β€’ i make a vegetarian (but not vegan) gnocchi with sundried tomatoes and spinach and a sauce made from tomato paste and cream. so easy and so tasty. β€’ japanese curry is so easy too. carrots, onion, potato, capsicum, and mushrooms all in a pot cooking until soft, then you add vege stock and golden curry mix in and the whole dish makes itself. serve with rice! β€’ stews and soups are always good too, especially when packed with lots of lentis. you just prep all the ingredients and chuck them in to cook themselves. β€’ vegetarian nachos, just make a bean / lentil based chili! β€’ not vegan but shakshouka is also great too because it's heavy on the protein. essentially just onion, capsicum, lots of diced tomatoes, which you then crack about 6 eggs into to cook. β€’ i went a long time not eating imitation meat, but you can get some really delicious fake sausages and burger patties, both of which you can just cook up and chuck in a bun with a few more ingredients. β€’ there are lots of delicious and varied ways to make tofu dishes. my friend made me a marinated tofu sandwich once and it blew my mind. good luck! confidence comes with practice. just stick to a simple list of dishes until you feel more comfortable, then you can look to branching out more. make things that you know you love to eat, or that you feel inspired to cook, so that you start to associate cooking with a reward or a treat. and have fun!

i like to make a lot of vegeterian/vegan/plant based foods, and a nice thick soup/stew is probably the easiest thing you can make, and you can add anything you like i usually start off by lightly frying up some garlic and chopped white onion with a bit of oil and some chili powder in a large pot(my gf's little sister gifted me a large black pot with a picture of the Moomin family on it); after the onion has browned a bit i add a bit of water, just to cover it and let it soften while i prep my other vegetables; here comes the fun part, you can add whatever your heart desires!! when i'm going for simple, i'll usually add just potatoes and carrots, season well and cook till thickened, but when i'm feeling crazy, i'll add some tomato juice with the water and onions while i cut the veg(we're talking potatoes, carrots, zucchini, bell peppers, tomatoes, spring onion etc etc generally i get anything that looks nice or is sitting in the fridge for too long, peas are also great, but i usually use those frozen); after i've added all the vegetables, i add spices(salt, black pepper, bit of garlic powder, red smoked paprika but this is absolutely your choice, add less or add even more), i add in more water(just enough to cover everything in the pot) and i let it cook on medium; after it's cooked for a while, i like to add frozen spinach( stew's a really great way to just add a bunch of stuff you'd usually forget to eat or find difficult to add in a recipe) and sometimes i even and lentils,chickpeas or beans(depending on time + patience, if you have neither, just add whichever(or mix!) canned, saves you time and is really low effort); once everything's cooked through, it should be nice and thick( you can always add a bit of water in which you've dissolved a teaspoon or two of flour if you wish to thicken the stew). serve in a big bowl,with some bread of your choice(homemade torillas are amazing with this) and enjoy. it really basically just comes down to you adding whatever vegetable and spices you like, it's really simple and doesn't require any cooking skills. enjoy, share a picture if you end up making it :)

- Stir fry any vegetable you find in your fridge/pantry (beans add a lot of protein btw, I really like edamame and black beans in my stir fries) -> add a tortilla and guac and you'll have delicious tacos - salads, with tofu, chickpeas, nuts, etc., with dressings like tzaziki - dumplings, gyozas, wontons, pierogis, samosas, raviolis, empanadas, ... with veggie fillings - Soups and stews, which are really easy to cook, e.g. tomato soup, pumpkin soup, etc. -> curry soups or stews, especially indian curries, you'll find many vegetarian and vegan recipes online with tofu or chickpeas

Being vegan is incredibly easy! legumes are very healthy and cheap, so I'd look into some chickpea curries and lentil dahls. Beans are also great, it's probably easier to just use those as starting points. As for the beyond meat cynicism, I'd at least look up how to prepare tofu well (starch, soy sauce and agave syrup all help). You can make a good butter chicken like dish if you put it in the oven too.
