i like to make a lot of vegeterian/vegan/plant based foods, and a nice thick soup/stew is probably the easiest thing you can make, and you can add anything you like
i usually start off by lightly frying up some garlic and chopped white onion with a bit of oil and some chili powder in a large pot(my gf's little sister gifted me a large black pot with a picture of the Moomin family on it); after the onion has browned a bit i add a bit of water, just to cover it and let it soften while i prep my other vegetables; here comes the fun part, you can add whatever your heart desires!! when i'm going for simple, i'll usually add just potatoes and carrots, season well and cook till thickened, but when i'm feeling crazy, i'll add some tomato juice with the water and onions while i cut the veg(we're talking potatoes, carrots, zucchini, bell peppers, tomatoes, spring onion etc etc generally i get anything that looks nice or is sitting in the fridge for too long, peas are also great, but i usually use those frozen); after i've added all the vegetables, i add spices(salt, black pepper, bit of garlic powder, red smoked paprika but this is absolutely your choice, add less or add even more), i add in more water(just enough to cover everything in the pot) and i let it cook on medium; after it's cooked for a while, i like to add frozen spinach( stew's a really great way to just add a bunch of stuff you'd usually forget to eat or find difficult to add in a recipe) and sometimes i even and lentils,chickpeas or beans(depending on time + patience, if you have neither, just add whichever(or mix!) canned, saves you time and is really low effort); once everything's cooked through, it should be nice and thick( you can always add a bit of water in which you've dissolved a teaspoon or two of flour if you wish to thicken the stew).
serve in a big bowl,with some bread of your choice(homemade torillas are amazing with this) and enjoy.
it really basically just comes down to you adding whatever vegetable and spices you like, it's really simple and doesn't require any cooking skills.
