Ignore me in the corner but if you mix chickpeas and white beans with literally any salad ingredient it somehow gets better all week long. This is just beans. Green pepper. Cherry tomatoes but in yellow(?). Cucumber. Lemon. Salt pepper garlic paprika. Olive oil. I’ve been eating it for 2 days and no end in sight. ALSO KALE THERES KALE AND THE KALE DOESNT WILT
1: choose your fave pasta shape and any seasonal veggies (and protein of your choice) and some good Parmesan and you ’ve got yourself a perfect lunch :) My fave is orzo with peas, chickpeas, dill (lots of it), lemon and olive oil 2 : can of chickpeas, cucumbers, toms, red onion, lots of parsley, olive oil, sumac (this is a must!) and whatever else you like to bulk it - I usually go for red cabbage or kale
cut up these vegetables to your prefered size:
- cucumber
- baby tomato
- bell pepper (i like yellow for the color)
- red onion then add canned chickpeas
top with feta cheese
mix all together then add your basic vinaigrette
- olive oil and vinegar (2:1 ratio)
- a teaspoon of dijon mustard whisk and voila! drizzle the vinaigrette, squeeze some lemon juice and voila! yummy salad and very easy to meal prep, esp if you just cut all the vegetables ahead of time. i would say to store the vinaigrette separately and add it when ur about to eat it bc if you store it in meal prep containers, all of the vinaigrette is gonna consolidate at the bottom.
I usually just make myself drip coffee or a single cup of tea during the week but I’ve got a little time so why not make a whole tea service just for me
