Spend a Sunday making milanesas. Buy chicken breasts, cut them in half, pound them, and coat them in egg, flour, and bread crumbs/panko. Pack them in ziplock bags and stash in your freezer. Sooo clutch I’ve used them in salads, chicken curry katsu, chicken sandwich, etc. 30 mins in the oven at 415, flip half way, done-zo. Take care of yourself in advance 🤠

1 // CHICKEN LETTUCE WRAPS in a bowl, add peanut butter, soy sauce, sesame oil, hoisin sauce, brown sugar, chili oil, squeeze half a lime. taste it and when it seems good add enough water to make it saucy enough to coat the amount of chicken you have (prob like 1/2 cup). separately, dice bell peppers into little squares, dice garlic and also an onion or shallot. in a hot pan with oil, cook up your veg mix for a few mins (decide how crunchy you want the peppers), set aside. add a splash more oil and your ground chicken. once it’s fully cooked and starting to brown, add back in your veg and your sauce mix. taste it at this point and maybe splash some more soy sauce on it. eat straight up with a spoon or use lettuce (green leaf or butter) to make little wraps! 2 // CHICKEN MEATBALLS in a large bowl, mix ground chicken, 1 egg, 1/2 cup panko or breadcrumbs, a shit ton of grated parmesan, onion powder, garlic powder, a glug of olive oil. mix til incorporated. form into balls. in the oven for 25 mins at 400°F.

I made one for summer (kayak, eat corn!) and forgot to make one for fall+winter. Gonna do a spring bucket list (planting, marshy hikes b4 it gets ticky). Doesn’t have to be on theme even but it’s a nice way to engage in the fleeting seasons
