love love love lentil soup. it’s so comforting and also keeps you feeling full and satisfied. i’ve made minor tweaks to the recipe i linked: - add 2 cloves of minced/pressed garlic after the onions and celery have sweat - add 1 tsp each of turmeric powder and cumin powder - use both the zest AND juice of the lemon

I’m not sure if you will like it but my mum used to make this for me during winter and it has a special place in my heart. Hope you give it a go (if you do let me know how you found it) Sauté half a white or red onion in a pan. Chop 1–2 cloves of garlic and add them in. Add any extra seasoning you like (I love throwing in some red chilies at this stage and cooking them off). Stir in 100g of red lentils. Pour in vegetable stock (a must, or it’ll taste pretty bland!). Simmer until the lentils are fully cooked. It should have a soup-like consistency. Add salt to taste Serve with your favourite sourdough bread. 🥖✨

Anything by Carter Were She has a few cookbooks, as well as a stubstack, and I regularly make her versions of: ~ pumpkin soup ~ green soup ~ cauliflower soup There’s always at least one in my freezer. Also great are Samin Nosrat’s Tuscan bean and kale soup, it’s in Salt Fat Acid Heat.
