I used a rotisserie chicken for the chicken and chicken stock. mirepoix. Flour. Stock. Orzo. Lemon + parsley. Bang.
The antidote for winter blues is this soup. Super easy warm and bright for the gloomiest of days. My sub rec is to double the broth, lemon, turmeric, red flakes, and add cumin, paprika to the broth as well. This is a gluten free recipe but I am not so I use bread crumbs instead of oats for the meatballs and sometimes I’ll put in a little orzo in the broth. Here is the non-paywall version 😎

A vegan variation of caldo verde is a game changer too tbh, so much cheaper and a batch can feed an army when you add some beans and rice
Have a friend who you can hit up to throw/hit/kick ball with at a moment’s notice.
Obviously this can be mapped to non-ball sports as well as non-sport activities as needed, but there’s something special about a ball friend.

Onion, fennel bulb, red bell, garlic sautéed till caramelized. Chicken broth, salt, lemon juice, pepper flake, fennel seed. After simmering for 15, toss in chopped kale and cooked tortellini until kale is wilted. Add parm and black pepper as desired ❤️
