sooooo good, better than pancakes. you can make sweet ones and savory ones. very easy and they look beautiful. i once saw this meme which said “when the dutch baby has a gun:” over a screenshot of an “easy dutch baby“ recipe. i think about it often. couldn’t find it though.
These big, fluffy pancakes are incredibly easy to make and are delicious to eat. You can gussy them up with powdered sugar, jams, some fried cured meats, or whatever you have on hand. They always look like they'd be way more complicated than they are but are truly nearly impossible to fuck up.
As a host, I've recently learned the power of a sheetpancake (sheetpan pancake). All of your 'slices' get an even bake and can be self served so everyone may eat at the same time. Utilitarian! You can fit in more toppings and (from my experience) the fruit cooks evenly in the oven unlike when it's dumped on a hot pan. Look, it isn't as 'glamorous' but, with sheetpancakes, you can spend time making the real stars of the show: Sides. (Eggs, omelettes, frittatas-- If you think it, you can make it.) Give it a try. If you hate it then, the next time you make a classic pancake, you'll be even more grateful for the arduous, thankless, experience. To paraphrase Ina Garten; 'My friends aren't going to have more fun if I spend extra time in the kitchen.'
a big pet peeve I have is people complaining about not having community or only having “party friends” etc BUT are they inviting their existing friends or acquaintances to go out for dinner, go thrifting, watch tv, book club, people watch, day trip, mulberry picking? no, they are not. are they introducing their friends to each other? also not. i hate to be a cliché sometimes you gotta put some work into having the relationships you long for. plus: you’re part of the problem. AND have some appreciation for the friends you have instead of focusing so much in what you don’t.
Nothing annoys me more about the American culture than the lack of enthusiasm. If I invite you to go somewhere and your answer is “sure” or “why not”, I’m taking it back. I do not wanna be surrounded by indifferent people. It’s unworthy.
