All those ultra-processed meat alternatives are fine from time to time but they don't taste good and are very expensive. There are many better options.
Tofu is good but also try tempeh if you can find it. It's great with any marinade you can come up with.
Beans and legumes - so many varieties, cheap and versatile plus have lots of fiber. You can add them to anything - sauces, salads, soups, spreads. Can't go wrong. I like making various baked falafel-like patties with various legumes and whatever veggies/herbs I have.
Eggs are godsend. If you haven't tried Chinese steamed eggs google it now!
Dairy is important because of B12 vitamin. I love yogurt, buttermilk, cottage cheese and kefir - great with oatmeal, in or on pancakes or as a base to sauces and dressings
If you want specific recipes I recommend looking into Indian cuisine. There are so many vegetarian dishes there that are extremely flavorful and simple

wowww this is so much information and soo helpful thank you so much. i love the prepackaged lightlife tempeh already but have never tried making my own marinade, that i will have to do! need to make a bean spread. need to make scrappy falafel-like patties. NEED to try this chinese steamed egg (which i did in fact immediately google and it looks DELICIOUS). genuinely thank you sooo much for taking the time and energy to pour so many helpful recommendations my way!!💓

Being vegan is incredibly easy! legumes are very healthy and cheap, so I'd look into some chickpea curries and lentil dahls. Beans are also great, it's probably easier to just use those as starting points. As for the beyond meat cynicism, I'd at least look up how to prepare tofu well (starch, soy sauce and agave syrup all help). You can make a good butter chicken like dish if you put it in the oven too.

lean meats: - Turkey (ground, sausage, etc) - Chicken - Fish (fw baked salmon in the oven) - eggs (not a meat, but awesome. I'll be lazy and make an omlette for a meal often) easy to prep veggies: - onion (saute w ur green beans!) - bell peppers (saute, any color goes great with onions) - brussel sprouts (ik they are supposed to suck but saute in olive oil with garlic and then top with parmesean cheese and they're so good) - asparagus (olive oil, paprika, garlic and pepper, toss that shit in the oven yum) - avocado (technically a fruit but awesome topper for savory meals and a great snack by itself) - tomatoes (also a fruit, but dice them and stick em on top of your meal for an elevated experience)
I rly fw potatoes too, bc you can fry em in a pan or lazily bake them and bam its a side. Also never underestimate just some toast with butter.
Upping ur fruit game is a big win too- there are so many fruits and most of them are good so try anything. natures candy fr .
pro tip: make a big pot of soup/stew (tortilla soup is my fave) and eat off that for the week

• i make a vegetarian (but not vegan) gnocchi with sundried tomatoes and spinach and a sauce made from tomato paste and cream. so easy and so tasty. • japanese curry is so easy too. carrots, onion, potato, capsicum, and mushrooms all in a pot cooking until soft, then you add vege stock and golden curry mix in and the whole dish makes itself. serve with rice! • stews and soups are always good too, especially when packed with lots of lentis. you just prep all the ingredients and chuck them in to cook themselves. • vegetarian nachos, just make a bean / lentil based chili! • not vegan but shakshouka is also great too because it's heavy on the protein. essentially just onion, capsicum, lots of diced tomatoes, which you then crack about 6 eggs into to cook. • i went a long time not eating imitation meat, but you can get some really delicious fake sausages and burger patties, both of which you can just cook up and chuck in a bun with a few more ingredients. • there are lots of delicious and varied ways to make tofu dishes. my friend made me a marinated tofu sandwich once and it blew my mind. good luck! confidence comes with practice. just stick to a simple list of dishes until you feel more comfortable, then you can look to branching out more. make things that you know you love to eat, or that you feel inspired to cook, so that you start to associate cooking with a reward or a treat. and have fun!
